The main peculiarities of this tuna-fish are its delicacy, texture and compactness and its typical pink colour. The fish is carefully selected and then processed by hand, even today, as soon at is fished so that it retains its full fragrance. The result is a superior-quality product, thanks also to the traditional cooking method in brine. The whole fillets, all of which are first choice, are then placed by hand in glass jars and preserved in olive oil. A real delicacy with an incomparable taste.
